Preheat the oven to 180°C (350°F).
Start with 5 phyllo dough sheets of a rough size of 30x40 cm.
Cut each phyllo dough sheet into four equal rectangles.
Place one slice of prosciutto, two halfs of zuchinni slices and a chunk of brie..
Fold sides of the dough over the filling then fold one of the other two sides of the phyllo dough over the filling and roll into a roll.
Place the rolls onto a baking tray lined with parchment paper and grate over parmesan cheese.
Bake in a preheated oven for 15 to 20 monutes until golden.
